RECIPE INGREDIENTS

  1. 2 cups peeled, boiled, and mashed potatoes (requires about 2  medium russet potatoes)
  2. 3/4 cups peeled, chopped, and boiled carrots (I used 8-10 baby carrots)
  3. 2/3 cup nutritional yeast flakes
  4. 1/3 cup filtered water
  5. 1 Tablespoon lemon juice
  6. 1 teaspoon garlic powder
  7. 1 1/2 teaspoon salt
  8. 1/4 inch thick slice of yellow onion (the thickness of a hockey puck)
RECIPE INSTRUCTIONS
  1. Boil your potatoes and carrots until they are fork tender. Place potatoes, carrots and water in your blender.  Blend well.
  2. Place all remaining ingredients in your blender.
  3. Blend on high for about 30 seconds, or until mixture is completely smooth.  Add a small amount of water if your blender is having trouble mixing.  Adjust salt and seasonings to taste.
  4. Serve immediately with pasta, broccoli, tortilla chips or anything you want vegan Velveeta cheese on. Refrigerate leftovers in an airtight container for up to 1 week. Reheat leftovers on low on the stove (stirring constantly) or in the microwave for 30 seconds to 1 minute.
