Vegan Strawberry Chia Pudding Recipe

RECIPE INGREDIENTS
  1. 1 cup unsweetened plain almond milk
  2. 1/4 cup chia seeds
  3. 1 teaspoon vanilla extract
  4. 1/2 teaspoon stevia powder (or more if needed)
  5. 3-4 whole strawberries without stems
RECIPE INSTRUCTIONS

Step 1: Remove strawberry stems and place strawberries in Vitamix or Blendtec.

Step 2:  Add the almond milk, vanilla extract and stevia to the pitcher and blend until smooth.

Step 3: Pour mixture into a mixing bowl and add the chia seeds.  Stir until thoroughly combined.  Add a little extra almond milk if too thick.  Adjust sweetener to taste.

Step 4:  Serve immediately.  Can be refrigerated in an airtight container for up to 2 days.

Strawberry Chia Pudding
