  1. 1 cup whole grain old fashioned rolled oats, such as Bob’s Red Mill
  2. 2 teaspoons golden flax seeds
  3. ¾ cup pomegranate juice
  4. 2 cups frozen organic wild blueberries, plus a few extra for garnish
  5. 2 tablespoons pomegranate molasses
  6. 1 frozen banana, halved
  7. ½ cup 0% Greek yogurt, plus 2 teaspoons for garnish
  8. Juice of ½ lemon
  9. 2 teaspoons freshly grated orange zest
  10. Touch of honey, optional
  11. Pomegranate seeds, for garnish, optional
RECIPE INSTRUCTIONS
  1. Put the oats and flax seeds in your Blendtec or Vitamix blender and blend until the mixture becomes powder-like. If you don’t have a high-powered blender, just buy flax meal and oat flour instead.
  2. Add the pomegranate juice, blueberries, molasses, banana, yogurt and lemon juice.
  3. Blendtec blender: Press the Whole Juice button, or let the blender run on a high speed for around 1 minute or until liquified.
  4. Vitamix blender: Turn the knob to Whole Juice and flip the on switch.  If you don\’t have the automatic preset then start on speed 1/low, slowly turn the knob to speed 10, then flip it to high.  Let it run for around 1 minute.
  5. Regular Blender: Start on slow speeds and let the blender work those ingredients in and then increase to a higher speed for a smooth consistency.
  6. Add the zest and honey to taste and blend for a few more seconds.
  7. Transfer the mixture to a container with a tight-fitting lid and refrigerate for at least 8 hours and up to 24 hours (this will help create a smoother consistency as the oats and flax seeds absorb some of the liquid and become thicker).
  8. Divide smoothie between 2 glasses, top with a dollop of yogurt and a few berries and pomegranate seeds, if desired. The smoothie will keep in the refrigerator for 2 days or in the freezer for 5 days.
