  1. 1 1/2 cups (360 ml) filtered water
  2. 14 1/2 ounces (410 g) boxed diced organic tomatoes
  3. 2 organic Roma tomatoes, halved
  4. 1 medium organic carrot, halved, or 3-4 organic baby carrots
  5. dry sun dried tomatoes, soaked and drained (2.6 oz)
  6. 1 1/2 Tablespoons (15 g) onion, peeled (.5 oz)
  7. 1 garlic clove, peeled
  8. 1 1/2 Tablespoons fresh thyme sprigs (leaves only if sprigs are woody and thick)
  9. 1 teaspoon fresh oregano leaves
  10. 1 Tablespoon tomato paste from a glass jar
  11. 1/2 vegetable bouillon cube
  12. 1/2 teaspoon flax meal
  13. 0.5 cup (120 ml) unsweetened plain almond milk or rice milk, room temperature
RECIPE INSTRUCTIONS
  1. Pre-soak the sun-dried tomatoes in filtered water until soft (about two hours), then drain. Then prep all other ingredients.
  2. Put all ingredients into your blender jar in the order listed.
  3. Blendtec Blender: Start blending on the lowest setting, then increase slowly to high. Leave on high for 6 minutes and 30 seconds.
  4. Vitamix Blender: Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 6 minutes 30 seconds, using tamper only if needed, until mixture is hot.
  5. Regular Blender: Start on slow speeds and let the blender work those ingredients in and then increase to a higher speed for a smooth consistency. Once all ingredients have been blended to a smooth consistency, transfer the mixture to a large pot and warm on the stove for 10 minutes, or until the soup is hot.

Delicious Thyme Tomato Soup

This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities. If using a different machine, refer to your owner’s manual for the proper processing times (times listed in this recipe are approximate).
