RECIPE INGREDIENTS
  1. 4 large carrots, diced
  2. 1 large red bell pepper, diced
  3. 1 pint cherry tomatoes or 3 medium sized heirloom tomatoes (if the latter, cut into quarters)
  4. 1/2 celery stalk, diced
  5. 1 tbsp. fresh lemon juice
  6. 1/4 tsp. cayenne
  7. 1 tsp. ground paprika
  8. 1 tsp. freshly grated horseradish root (this can be pulverized in your Vitamix or Blendtec instead of using a grater)
  9. Salt, to taste (optional)
  10. 5 ice cubes (or more, to create desired consistency)
RECIPE INSTRUCTIONS
  1. Place all tomatoes and lemon juice in Vitamix or Blendtec blender and blend until smooth.
  2. Place remaining ingredients in Vitamix or Blendtec blender and blend until desired consistency.
  3. Serve immediately, or place in refrigerator for up to 30 minutes to chill.

Cherry Tomatos

3. The tomato is the edible fruit/berry of the nightshade Solanum lycopersicum.  Tomatoes are high in antioxidants and particularly rich in Lycopene, a compound thought to be important in bone and prostate health.  Tomatoes are also high in Vitamin C, Biotin, Molybdenum, Vitamin K, Potassium, Copper, and Manganese.

 

 

Celery
