RECIPE INGREDIENTS

  1. 11.8-ounce box coconut water
  2. 2 cups chopped fresh pineapple
  3. 2 cups diary-free coconut yogurt
  4. 1 cup cream of coconut
  5. 1/2 cup unsweetened coconut milk
  6. 3/4 cup coconut water (or more if needed)
  7. 1/4 cup shaved fresh coconut
  8. 6 coconut ice cubes

RECIPE INSTRUCTIONS
  1. The night before, pour the coconut water into ice cube trays.  Do the same with the cream of coconut.  Freeze until solid.
  2. Open a fresh young coconut and pour the coconut water into a glass.  Measure out 3/4 cup and pour it into the blender.  Using a spoon, scrape out enough white meat from the inside of the coconut to make 1/4 cup and add to the blender.  Put all remaining ingredients in the blender until smooth.  Thin with more coconut water, if desired, then add the ICE last.
  3. Blendtec Blender: Using your Blendtec press the smoothie button and let it run, if you want to manually make it then start on speed 1 or speed 3 until all the ingredients catch, then increase to higher speeds for a smooth consistency.
  4. Vitamix Blender: If you have a newer Vitamix-blender then use the automatic smoothie setting! If you have an older Vitamix or want to blend manually then start on speed 1/low and slowly increase to speed 10/high. Use the Tamper if needed. Blend until smooth.
  5. Regular Blender: Start on slow speeds and let the blender work those ingredients in and then increase to a higher speed for a smooth consistency.
