  1. 1 large eggplant
  2. 1 cup walnut pieces
  3. 2 teaspoons frozen ginger root, peeled and grated
  4. 2 cloves garlic, mashed
  5. 1 Tablespoon extra-virgin olive oil
  6. 1/8 teaspoon ground allspice
  7. Salt and hot pepper sauce to taste

Dr. Weil\'s Eggplant-Walnut Pâté

RECIPE INSTRUCTIONS
  1. Preheat oven to 450°F. Pierce the eggplant with a fork in several places and bake until very soft, about 45 minutes.
  2. While the eggplant is baking, grind the walnuts in a Vitamix or Blendtec until very fine, and set aside.
  3. Remove the eggplant from oven, slash to let steam escape, drain off any liquid, and scrape the pulp into the Vitamix or Blendtec with the ginger root, garlic and olive oil. Process until smooth.
  4. Add the ground walnuts and allspice, and process until smooth.
  5. Season to taste with the salt, and hot pepper sauce. Spoon into a small loaf dish and chill several hours or until firm.

The Dr. Weil Eggplant-Walnut Pâté can be served up in several ways as an h’orderves at your next formal dinner or gathering.  Spread it on gluten-free crackers and add small parsley or dill sprigs on top.  Or, spoon the Dr. Weil Eggplant-Walnut Pâté into a fancy or cool dish and neatly arrange gluten-free crackers around the platter with accents of parsley and olives placed throughout.  You can also spread the Dr. Weil Eggplant-Walnut Pâté on baguette slices and top with an olive and parsley sprig or sun-dried tomato.  The options are endless!  Just be sure to double or triple the batch in the Vitamix or Blendtec, because this dish will be gone quick!
