A refreshing juice made from fresh tomatoes, combined with crisp celery, carrots, and horseradish. The primary ingredient, tomatoes, are rich in lycopene. Nutrient Enriching Vegetable Juice Recipe by Martha Stewart

    1. 1  1/2   Cup filtered water
    2. 3 medium Tomatoes, cut into large chunks
    3. 7 Celery stalks, each cut into 3-inch pieces
    4. 1/2 pound Carrots, each cut into 3-inch pieces (do not peel)
    5. 1 piece Fresh Horseradish, (2 1/2 by 1/4 inches), peeled (or 2 1/2 teaspoons prepared horseradish)
    6. 1/4 teaspoon Coarse salt
    7. 2 1/2 teaspoons freshly squeezed lemon juice, plus lemon wedges, for serving
    8. 1   Cup ice
RECIPE INSTRUCTIONS
      1. Working in batches, combine the tomatoes, celery, carrots, and horseradish in your blender.
      2. Blendtec blender: Press the Whole Juice button, or let the blender run on a high speed for around 1 minute or until liquified.
      3. Vitamix blender: Turn the knob to Whole Juice and flip the on switch.  If you don’t have the automatic preset then start on speed 1/low, slowly turn the knob to speed 10, then flip it to high.  Let it run for around 1 minute.
      4. Stir in salt and lemon juice.
      5. Pour vegetable mixture through a fine sieve into another large bowl or a pitcher. Divide vegetable juice evenly between 2 glasses. Serve each with a lemon wedge.

Tomato

The tomato is the edible fruit/berry of the nightshade Solanum lycopersicum. Tomatoes are high in antioxidants and particularly rich in Lycopene, a compound thought to be important in bone and prostate health. Celery

Carrots

Carrots, botanically named Daucus carota subsp. sativus, are a root vegetable, usually orange in colour, though purple, red, white, and yellow varieties exist. Carrots are very high in Vitamin A and an excellent source of beta carotenes. These compounds have shown to aide in prevention of heart disease and to help maintain healthy cholesterol. Many, many studies have been conducted on carrots and human health – they also play an important role in the healthy functioning of the eye. Carrots are alse high in Biotin, Vitamin K, fiber, and molybdenum.

Horse Radish Root

Horseradish (Armoracia rusticana, syn. Cochlearia armoracia) is a perennial plant of the Brassicaceae family. Horseradish root is a powerful, pungent, spicy plant that has been used medicinally for over 3000 years. Horseradish contains unique nutrition in the form of glucosinolates, a family of phytonutrients. When exposed to air, glucosinolates break down into chemicals called isothiocyanates, which have shown many health forming benefits – most notably around cancer prevention.

Coarse Salt

Coarse salt is a mineral substance composed primarily of sodium chloride. The coarseness or fineness of salt is one of the ways of adjusting its flavor.
