Vegan Cream of Mushroom Soup Recipe
- 2+ cups filtered water
- 1 onion
- 2 cloves garlic
- 1 head organic cauliflower
- 2 cups organic mushrooms (any type)
- ⅓ cup pecans
- sea salt
- ground pepper
- chives for garnish (optional)
- Step 1: Start two cups of water boiling in a pot.
Step 2: Peel and coarsely chop the onion and garlic and add to the water. Cook for about 3 minutes.
Step 3: Wash the mushrooms and cauliflower. Break up the cauliflower head into florets and add them to the water. Cook for about six minutes.
Step 4: Add the mushrooms and cook everything together for another 4 minutes. Make sure the cauliflower is completely cooked and if not, cook until done.
Step 5: Remove cooked vegetables from the water and transfer them to your Vitamix or Blendtec pitcher.
Step 6: Measure the remaining steaming water, and top it off to 2 cups to make up whatever water boiled off during steaming. Add it to the pitcher. Then add the nuts, salt and pepper.
Step 7: Start on low speed, and ramp up to high and blend until smooth.
Step 8: Top with chives and serve immediately. Refrigerate extra soup in an airtight container for 3-4 days or freeze for up to two months.
