Easy Raw Pico de Gallo Salsa Recipe

  1. 4 heirloom tomatoes, halved
  2. 1/2 red onion, loosely chopped
  3. 1 bunch green onions, chopped
  4. 2 jalapeno peppers, halved and seeded
  5. 1 bunch cilantro
  6. 2-3 tbsp. fresh lime juice
  7. 2 tsp. salt

PICO DE GALLO SALSA

RECIPE INSTRUCTIONS
  1. Cut tomatoes in half and squeeze them with your hands to remove some of the juice and seeds into a cup.  You can use the juice or seeds in another recipe, or discard.
  2. Place tomatoes and lime juice in Vitamix or Blendtec blender and blend for 10 seconds
  3. Add remaining ingredients and blend until desired consistency.
  4. Serve, smile, and eat!  This recipe will keep for up to a week in the refrigerator, and will strengthen in spice and flavor after a few days.

Easy Raw Pico de Gallo Salsa is primarily made from tomatoes, sporting high levels of antioxidants and containing the much-studied Lycopene – shown to reduce likelihood of prostate cancer in men.  Additionally, the jalapeno peppers provide a spicy kick of capsaicin which has been shown to regulate blood sugar and reduce LDL cholesterol.  The cilantro provides a cooling flavor as well as formidable anti-bacterial and yeast fighting compounds.
