  • 2 pounds organic sweet potatoes, cut into 2″ chunks
  • 2 Tablespoons coconut oil
  • 1 Tablespoon curry
  • 1/2 teaspoon turmeric
  • 1 teaspoon Celtic or Himalayan sea salt (or to taste)
RECIPE INSTRUCTIONS
1: Preheat oven to 350.

2: Toss the cubed sweet potatoes with the coconut oil, curry, turmeric, and salt.
3: Bake in the oven for 1.5 hrs or until cooked through well and crispy on the outside.
