Health Benefits
Vegan strawberry chia pudding is a wonderful source of plant-based protein and fiber, while staying low on the glycemic index. Chia seeds are one of the best sources of fiber in the world. They can absorb up to 10-12 times their weight in water, expanding in your stomach and helping you to eat fewer calories. Combined with their high protein content, they are an ideal food for weight loss. Chia seeds also contain Omega-3 fatty acids, a hard to find element of the vegan diet, packing in more Omega-3s than salmon. Additionally, chia seeds are important for bone and heart health and help combat against type 2 diabetes. Strawberries carry potential health benefits against cancer, aging and neurological diseases, possess anti-inflammatory properties, help the body develop resistance to infection, and assist the body in metabolizing carbohydrate, proteins and fats. They are nutritional powerhouses, rich in vitamins A, C and E, the B-complex vitamin group, phenolic flavonoid phyto-chemicals called anthocyaninsand ellagic acid, and minerals like potassium, manganese, fluorine, copper, iron and iodine. Stevia is 0 on the glycemic index, helping keep your blood sugar levels in check and preventing future sweet cravings.
