Daphne Oz Watermelon-Jalapeno Feta Gazpacho Soup Healthy Soup
Watermelon-Jalapeno Feta Gazpacho Soup by Daphne Oz
- 6 ripe plum tomatoes
- 2 cups cubed, seedless, watermelon
- 2 medium seedless or English cucumbers, peeled and chopped
- 3/4 cup diced vidalia onion
- 1/2 jalapeño
- 1 garlic clove
- 1/4 cup chopped parsley
- 1/4 cup chopped fresh mint
- 1/4 cup red wine vinegar
- Juice of 2 limes
- 1 cup tomato juice
- Pinch kosher salt
- 1/2 cup crumbled feta cheese for garnish
- Hot sauce or Worcestershire sauce for garnish
- 1. Put all ingredients in your blender jar except for the feta and the hot sauce or Worcestershire sauce.
- 2. Blendtec blender: Press the Whole Juice button, or let the blender run on a high speed for around 1 minute or until liquified.
- 3. Vitamix blender: Turn the knob to Whole Juice and flip the on switch. If you don’t have the automatic preset then start on speed 1/low, slowly turn the knob to speed 10, then flip it to high. Let it run for around 1 minute.
- 4. Serve cold with a crumble of feta and a dash of hot sauce or Worcestershire sauce.

The tomato is the edible fruit/berry of the nightshade Solanum lycopersicum. Tomatoes are high in antioxidants and particularly rich in Lycopene, a compound thought to be important in bone and prostate health. Tomatoes are also high in Vitamin C, Biotin, Molybdenum, Vitamin K, Potassium, Copper, and Manganese.
Citrullus lanatus is a plant species in the family Cucurbitaceae, a vine-like flowering plant cultivated for its fruit. Watermelons, like their name suggests, have a high moisture content – making them great for juicing or blending. Watermelon contains some vitamin C, vitamin A, B vitamins, copper, and potassium.
