Vegan Velveeta Cheese Recipe Easy and Healthier
Vegan Velveeta Cheese Recipe
- 2 cups peeled, boiled, and mashed potatoes (requires about 2 medium russet potatoes)
- 3/4 cups peeled, chopped, and boiled carrots (I used 8-10 baby carrots)
- 2/3 cup nutritional yeast flakes
- 1/3 cup filtered water
- 1 Tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 1/2 teaspoon salt
- 1/4 inch thick slice of yellow onion (the thickness of a hockey puck)
- Boil your potatoes and carrots until they are fork tender. Place potatoes, carrots and water in your blender. Blend well.
- Place all remaining ingredients in your blender.
- Blend on high for about 30 seconds, or until mixture is completely smooth. Add a small amount of water if your blender is having trouble mixing. Adjust salt and seasonings to taste.
- Serve immediately with pasta, broccoli, tortilla chips or anything you want vegan Velveeta cheese on. Refrigerate leftovers in an airtight container for up to 1 week. Reheat leftovers on low on the stove (stirring constantly) or in the microwave for 30 seconds to 1 minute.
