Agua Fresca Watermelon Smoothie by Bobby Flay

  1. 1 small watermelon, peeled, seeded and diced
  2. Juice of 2 fresh limes
  3. 1/4 cup simple syrup* (can be substituted with Honey)
  4. 2 cups cold water
  5. Ice
RECIPE INSTRUCTIONS
  1.  Put the watermelon in a blender, in batches, if needed and blend until smooth.
  2. Blendtec blender: Press the Whole Juice button, or let the blender run on a high speed for around 1 minute or until liquified.
  3. Vitamix blender: Turn the knob to Whole Juice and flip the on switch.  If you don’t have the automatic preset then start on speed 1/low, slowly turn the knob to speed 10, then flip it to high.  Let it run for around 1 minute.
  4. Pour the mixture through a strainer set over a bowl.
  5. Transfer the watermelon juice to a pitcher, add the lime juice, simple syrup and water and stir to combine. Cover and refrigerate until cold, at least 30 minutes and up to 24 hours. Serve in tall glasses over ice.

*Simple Syrup – Combine 1 cup of sugar and 1 cup of water in a small saucepan and bring to a boil over high heat. Cook until the sugar is completely melted. Remove from the heat and let cool to room temperature; refrigerate until cold. The syrup will keep in the refrigerator tightly covered for up to 1 month.
